1 potato
1 apple
1 Tbs frozen peas
a bit of cucumber (about 1 Tbs, slice medium)
a bit of onion, fresh and chopped (about 1 tsp)
1 stalk coriander/cilantro, chopped (optional)
seasoning
some salt (or scallop flavoured salt)
chicken stock granules (optional, use only if you don't have the scallop salt)
mayonnaise, loads
pepper
- Blanch peas and boil potato. (This can be done the night before, refrigerate when cooled down.)
- Use a butter knife to peel potato, then roughly cut into bits about 1 in diameter.
- Cube apple into bite size pieces, smaller than potato bits.
- Place peas, potato, apple, cucumber and onions in a bowl. Mix.
- Add in seasoning, to taste then stir lightly to combine.
- If you're using the cilantro/coriander, add in now and stir quickly.
Flavouring
It doesn't require much, as long as the mayonnaise covers all the ingredients. Make sure though it isn't too salty and the pepper flavour is not too heavy.
